Chouquettes

Ingredients

  • 250 g of water
  • 100 g of salted butter
  • 150 g of flour
  • 1/2 sachet of baking powder (~5 g)
  • 1 tablespoon of sugar
  • 3 whole eggs
  • Pearl sugar for the topping

Steps

  1. Preheat your convection (aka fan-assisted) oven to 170 °C.
  2. In a pan, bring the water (250 g) and the butter (100 g) to a boil.
  3. As soon as it does, remove from the heat and add the flour (150 g), and baking powder (1/2 sachet).
  4. Mix until the dough forms a ball. Let it cool down for a couple minutes.
  5. Add the sugar (1 tablespoon) and the eggs (3) one after the other, mixing well after each addition.
  6. Pour the mixture into a piping bag and pipe small balls onto a baking sheet. Make sure to leave plenty of space between them.
  7. Sprinkle with pearl sugar. Press them gently to stick.
  8. Bake for 15-20 minutes or until golden brown.
  9. Let them cool down for a couple minutes.
